Medical bills and taxes?

If I gave the hospital the check to pay off my medical bills today (Dec. 31st) can I still count them on my taxes for 2007

I would. Although I have heard from some accountants that you can't claim them unless the check was cashed in 2007.

You can. You paid them on Dec, 31, 2007. Anything in 2007 goes on 2007 tax returns.

Yes, even if you postmarked it today and dated it today, you could count it as a payment for 2007.

Yes, if the check is dated in 2007 and you either give it to them or mail it in 2007, it counts for 2007 taxes. When it's cashed doesn't matter.
