If you are terminated or quit your job and the employer deducts for vacation etc can they take the whole check

Sure.

Same thing with severance packages. If they find they've paid you too much money and you didnt earn it they will ask for the money back.

But not all companies are like this. Just depends on the employer.

If you owe the money back, you owe the money. They don't have to gift you with money you didn't earn.

Yes they can, if you owe it they will take it

This depends on how you earn vacation and on where you live. Every company's plan is different, and different states have different laws which govern them.

For example, if you accrue vacation (earn a little every week/month), that accrued time must be paid out to you when you leave if you work in certain states. If you have a "use it or lose it" plan (you get 40 hours every Jan 1, for example), you may forfeit that time if you leave the company.

Visit www.dol.gov for more on wage and hour regulations in your area. Good luck.
