Job opportunities for graduates with an Associate's degree from a physician assistant program?

I'm still undecided with my career and major, but I've narrowed it down to three potential careers: Radiation therapist, electrical engineer, or physician's assistant. All of them have median salaries at least 65k (according to the Department of Labor)

Focusing on physician's assistant, if I go that path the most convenient college for me to go to is Riverside Community College which offers an Associate's degree. Yeah it's a CC but it's accredited by the American Academy of Physician Assistants, and the coursework is similar to the equivalent program for a Master's at Stanford

If I get the Associate's, would I still have a good opportunity to get a job? Any P.A.'s out there that could pass on some advice?

the medical field needs good people...with the baby boomers reaching retirement now...there will be more demand than ever.....3 of my kids are in the medical field
